At first that left me with rice and pork. Currently I'm eating Rice, Pork, Beef, (once or twice a month max and only from places the cows were Sean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-53548443841834938392013-03-06T22:14:00.002-07:002013-03-06T22:16:13.578-07:00Asparagus Soup
Asparagus Soup over Whole Wheat Pasta
We found about 2 pounds of organic asparagus on sale recently and I had no idea what to do with it until a friend posted the link to Raw Asparagus Soup: blendtec.com/recipes/raw_asparagus_soup
Unfortunately (or perhaps I should say fortunately) the original recipe has dill which I don't like, and lemon which I'm allergic to, so I decided to alter the Sean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-19894519142122998372013-03-05T17:44:00.000-07:002013-03-05T17:44:35.644-07:00Another Complete Protein
This little power house vegan meal I whipped up was yummilicious! Yummy and nutriticious that is if my dietitian is to be believed! Learning about complete proteins is new to me, so I have just been getting the hang of it. According to my dietitian, quinoa is a complete protein on it's own, and brown rice is a complete protein when combined with seeds, so this meal has 2 complete protein Sean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-60924060052038218172013-03-04T16:27:00.000-07:002013-03-04T16:27:17.108-07:00Complete Proteins
BBQ Veggie Pita Pizza
First Mondays of the month I participate in a phone call with a dietitian paid for by my insurance. I would prefer in person nutrition classes and the like, but this is what my insurance pays for. It's a bit like having a life coach for health. At the end of each call she asks me to set goals. I said I should keep the same goals since I was not satisfied Sean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-23581637325587949502013-03-01T14:30:00.002-07:002013-03-02T16:22:07.740-07:00Health UpdateIt's been a while since I blogged about my health or food. Sorry about that! I know I'm pretty inconsistent about when I blog here. But I had a really good appointment at my Endocrinologist last week, and wanted to share here about what changes I've made and the results.
Changes to my diet:
I have quit eating beef, been eating at least 5 green smoothies a week, and am still enjoying Meat Free Sean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-42798719892339451662013-01-31T13:25:00.000-07:002013-01-31T13:25:57.895-07:00Green Smoothies are Not All Green in Color
I have found it harder to find things for breakfast that feel satisfying, healthy and are delicious until now. I noticed some of my Instagram friends were doing a 30 day green smoothie challenge by Simple Green Smoothies. In the past I have been frustrated that so many smoothies contain bananas and afraid of the fruits in them spiking my blood sugar. So I spoke with a couple of Sean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-5339473128872629052012-11-28T11:48:00.003-07:002012-11-28T11:48:47.065-07:00Cheese - can you go without?OK my Vegan friends, what is your favorite "cheese" or do you just go without? I have a LOVE of aged cheddar and Gouda cheese. You may have noticed that I often put cheese on meals as well. It is one of the the things (other than my meat eating partners) that make it hardest to avoid animal food products. Thanksgiving Yams with Orange Cranberry Relish
What are your yam or sweet potato recipes for the holidays? Here is what I made. It was inspired by someone on Gourmet Babylon, a FB group a friend invited me to about a month ago. They have given me so many great ideas that I have neglected to blog. So I'm making up for it today with 2 entries. We will definitely be making this again.

Pumpkin Dinner Rolls
Thanksgiving Brunch in my house has always been a quick and easy, light meal so that we have room for the big meal later, but energy for a walk before "linner" (late lunch, early dinner) which also means less cooking for the chef/s. So last night I made the Pumpkin Dinner Rolls. Based off of this recipe: http://www.beyondkimchee.com/pumpkin-dinner-rolls/ which I altered toSean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-60756507568818918112012-10-20T21:16:00.001-07:002012-10-22T09:39:12.331-07:00Beets - expanding our food preferences
Red and Golden Beets being prepped to make chips
As a child and even as a young adult, I just did not like beets. I had only ever tried red beets that were boiled to death and had used them to dye clothing for a science project, but had never found a way in which I liked to eat them. Granted, I didn't try very much. I just ate what people gave me and didn't like it.
But these days, I've Sean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-13948206193226341722012-10-20T12:57:00.001-07:002012-10-20T21:57:02.548-07:00Open Faced Sandwiches
Heritage Tomato Yumness
One of my favorite things to do in cutting down carbs is to simply have an open faced sandwich, and previously where I would have had just meat, cheese and bread, instead having a healthier lower fat cheese, veggies, maybe some meat, and a healthier higher protein lower carb bread or just a REALLY delicious bread. Both of which often go together for me, because I like Sean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-60933912932462164172012-10-10T20:36:00.002-07:002012-10-10T20:41:01.619-07:00Pizza Yumness!!!!
Today I got a message that a friend had left basil on my front door... yesterday. Being that this is a hot part of the country, we suspected it had wilted. However we were pleasantly surprised to discover it had not. She also sent me some dehydrated and ground sweet peppers which are a sweet and delicious spice I have now added to my pantry and will be making more of in the future once we get Sean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-84417360260740151632012-10-08T19:38:00.001-07:002012-10-08T19:38:45.997-07:00A light dinnerhttp://instagr.am/p/Qi3NEmqw2v/
I notices a couple of the sweet peppers were going bad and we had a bunch left so decided on a hummus plate and salad for dinner. After this i will dehydrate the rest.

Cinnamon Apple Casserole
Yesterday was supposed to be Meatless Monday in our house, but we're on vacation and forgot it was Monday. So while shopping at Sprouts in Ahwatukee, we remembered, and decided to make today Veggie Tuesday instead.
For this morning's Vegetarian Breakfast I mixed some Macadamia nuts and mixed bean sprouts in with Zen's Cinnamon Apple and Cactus Casserole. I love charts like this. When they make life so much clearer and simpler. Everything you wanted to know about sprouting on one page: Well, OK not everything, that would take books. But all the basics, and that's really what I want to know when I'm trying to prepare food.

What do you think of when you think of comfort food? What do you tend to reach for? I lean towards carbs and creamy things. It's been a hard couple of days, and I've been doing really good about not over indulging in foods that will make me sick and keeping to delicious healthy yumness. I'm pretty proud of me in fact. And the last couple of days have been really challenging. But here's some ofSean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-64398704594754808062012-09-15T12:22:00.001-07:002012-09-16T23:46:48.896-07:00Sprouting Wheat Berries
Repurposed Ricotta Cheese Container
Since I'd used up a container of ricotta cheese the night before which had a nice little basket in it, I decided to repurpose that container and basket for sprouting. As you can see from the photos, it worked well for the wheat berries (tho a few did get through at the beginning before they started to swell) I decided to eat 1/2 of them as Sean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-60848545281274976922012-09-14T09:30:00.001-07:002012-09-14T15:40:11.209-07:00Quick breakfast
Overnight oats and sprouted quinoa in cinnamon apple flavor, with an apple pear aka Asian Pear and some string cheese. Quick n easy! Only down side, this had more carbs than I usually eat. Still within the range I was told I can have, but more than I shoot for. Still, super quick and easy. Gotta love overnight muesl!
Tomorrow I'm going to try some with sprouted wheat berries and raw protein Sean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-21757750322701312352012-09-13T18:57:00.002-07:002012-09-13T22:27:53.348-07:00Black Bean Italian Flavored Burgers https://www.facebook.com/groups/HealthyRecipeSharing/

Marjorie from the Healthy Recipe Sharing group on Facebook shared her Black Bean Burger recipe with me. It sounds really good, but you know me, I had to tinker with it a little bit. First of all, let me just point out for those who haven't been keeping up with this food blog, that I am not dieting. I am working on finding delicious foods that contribute to my health. I also am not on a weight loss plan although I am losing weight, and will probably continue to do so for a while. Part of getting healthier is weight loss for me, tho not for everyone, and I certainly have no Sean-Michaelhttp://www.blogger.com/profile/13770920864165944873noreply@blogger.com0tag:blogger.com,1999:blog-5774379582010455498.post-29892752561403505102012-09-09T23:11:00.001-07:002012-09-11T15:48:18.004-07:00Coconut Mango Vegan Ice Cream/SorbetA friend of mine was sharing a simple vegan ice cream recipe made of nut milk, salt, cinnamon and maple syrup. Sounded delicious, but I happen to have coconut milk and mango, so thought I'd try a different recipe. I did a search for home made coconut milk ice cream and found a few recipes:
